Going to add a few things today to the "holiday" liquor cabinet such as:
Creme de Cocao, brandy, Creme de Menthe(green), Peppermint schnapps,)for those hot coffee/hot chocolate winter drinks), bourbon (for my favorite old fashioned), a nice bottle on single malt scotch(my birthday present to me), and a couple bottle of wine.
Wine: a couple whites (German), Merlot, Malbec, and a Cab.

OH, a a 12 pack of Winter type beer..

No, we really don't drink that much; but being prepared for friends and or not being able to get to the store for a few weeks(snow-mud etc.).

Have to drive the 90 miles to go to Arizona for a doc appt and might as well stock up there as New Mexico has HUGE TAXES on liquor.

Gin and vodka, maybe some dry vermouth. No civilized liquor cabinet would lack ingredients for a martini. Since you're in NM, you should probably have some tequila as well.

My 'entry level' liquor/wine cabinet/cellar would contain:

2 bottles prosecco
2 bottles chardonnay or sauv blanc
2 bottles cabernet or syrah

1 bottle XO cognac or excellent sherry
1 bottle drinkable vodka
1 bottle blended scotch

Keep a few mixers like canned seltzer, lemonade, and soda on hand, make sure there is ice available

For the holiday, a bottle of drambuie or good port is a nice gift.

Amaretto, Rum, Vodka, Kahlua, Mint schnapps for hot cocoa, whiskey for Irish Coffee, Red wine, white wine, beer (yum, seasonal Shock top, made with pumpkin spice!).

Basic would be Johnny Walker Black, Absolute vodka, Maker's Mark Bourbon, any tequila, Bombay gin, sweet vermouth, dry vermouth. Beer and wine, and probably a bottle of Bloody Mary mix and a bottle of Marguerita Mix.

Currently in ours:

Red wine. White wine.
Single malt: Lagavulin 16, Highland Park 25
Bourbon: Pappy Van Winkle 15, 20, and 23
Irish whiskey: Bushmills 21, Black Bush
Pusser's Rum 15

That's it.

My husband only drinks red wine; the rest is mine. And no, I am not an alcoholic, not even a 0.8% drinker.

Liquor cabinet: Vodka, gin, rum, whiskey, tequila are usually in stock. Along with bloody mary and margarita mix.

Wine rack: White zinfandel or another (fairly sweet) white wine. We keep red wine on hand, too.

Beer fridge: varies depending on season.
