Been making batches of coquito for years. I make the regular and the lite and give as X-mas gift
Ingredients
1 cup of dark rum - I use Pampero or Havana Club. Brugal is another excellent option.
6 egg yolks
2 cans of evaporated milk (fat-free or low-fat for the lite)
1 can sweetened condensed milk (fat-free for the lite)
1 can of coconut milk - preferably a Caribbean brand for more authenticity. (low-fat for the lite)
Directions
Beat the eggs well adding a little of the rum.
Add egg mixture, the rest of the rum, the evaporated, condensed and coconut milk in a large bowl and blend well. I do it with a whisk. Bottle the blend, add a stick of cinnamon and chill. Shake well before serving.
Enjoy!
NOTE: Ensure the yolks are well separated from the whites. Just in case I always put the coquito thru a strainer.
