With the onset of summer, my wife and I have taken to having a mimosa on occasion. Rather than buying champagne in bottles, we have been picking it up in splits, so much less goes to waste. Today we discovered splits of prosecco at the market for $11.xx a 3-pack. We'll probably drink those. Cook's champagne was $5.18 a 4-pack. <shrug> It doesn't take great champagne to make a mimosa.

I've never heard that term before. I've always just called them Champagne mini bottles.
Cook’s is way down on the list, even so, it’s drinkable in a mimosa. I should check Costco and see what kind of deals they have for Prosecco, mimosas are perfect for brunch.
Quality in, quality out. I can tell a difference between cheap (not to be confused with inexpensive) and quality.... mostly by way of the headaches that come from the cheap stuff.
I buy my prosecco at Aldi, it's either $8 or $9/bottle and compares well against $15/bottle stuff I've tried in the past. And to keep it, since my wife and I also have a mimossa each once a week and a bottle will make 4, we use this handy little thing:
It'll keep for 1 week with nearly no noticeable change (kinda a "is this a little less bubbly?, I'm not sure" thought). At 2 weeks you can tell, but it's still serviceable.... past that it's a crap-shoot and the odds aren't good. Maybe one of the other brands that has a seal the fits into the neck as well as on top will hold up better, I don't recall seeing those options when we bought this thing years ago. Works great for camping too, where the bottle is sloshed around in a cooler with ice.
The "mini" bottles are just too rich for my budget though I have an in-law who loves them.
I'm a wine consultant for a large liquor store, and when someone asks for Champagne/Sparkling Wine, the first thing I ask is what are they buying it for. If they say Mimosas, I always advise them to "go cheap" unless there are some people will will be drinking it "straight" or if they guests are connoisseurs. But I would say that 99% of the time, Cooks or something similar is just fine IF people are using it to mix with O.J.
Btw, all of the finer restaurants that I have gone for brunch uses the "cheap stuff" in their Mimosas, too. In fact, one of my former co-workers who was a sommelier for one of the Ritz Carltons said that their wine list even had Beringer White Zinfandel! (But this was many years ago, when I think the only readily available Whtie Zins were either Sutter Home, Beringer or Franzia, so maybe this is no longer true for the Ritz-Carlton.)
