Craigslist USA has been loaded with rental scams for a decade and a half. And real estate holding groups have their own version of "sketchy". It's so bad that in Canada Kijiji has replaced Cr., and then the scammers all move over to that site.

I’ve never been there, but have always wanted to visit to see if I like it. I’m just surprised at the low rents if you are saying 800 or so is the norm.

Out in the middle of nowhere bumpkinville, barely any good paying jobs and no grocery store. Cottonwood or Payson might be a better choice.

Cottonwood is still affordable, Payson isn't

They stick the food in an opening in their face, called "mouth", or pie hole.

People in more remote areas go to the supermarket every week or two. And most smaller towns have at least a dollar general for things you need right away.

Regarding the OP. If someone does not have to live in the Phoenix or Tucson metro areas there are lots of options in that price range. Globe, Payson, Kingman, Bullhead City, Benson, Sierra Vista, Douglas, Willcox, Safford, Eloy, Florence, Mammoth, San Manuel, Nogales and Rio Rico are all good choices.

If you are on a fixed income it could be a good situation. But if one has to work and moved to AZ without a job and expects low rent. Good luck.
