I can't imagine a 3rd tier industrial city in central China where no one speaks English, the food is bizarre, and the lifestyle is still 30 years behind the (comparatively) grand glittering cities of the East Coast.
Actually the most "bizzare" food is from southeast China (including Hong Kong).
People in north China usually don't east "strange things". In northwestern China there are many Muslims and they eat "normal things" strictly.

I was speaking from a Western perspective. Because the Cantonese have been so much more adventurous and effective in spreading their version of Chinese culture around, we see it as normal. Even the odder stuff like frogs, fish served head on and gored on the table etc are constitute "normalised" strangeness. Non-Cantonese food is totally foreign to most Westerners.

What about that famous market in Beijing selling insects, scorpions, seahorses, starfish.etc? Is that just an anomaly up North, I mean do they find it as much a novelty as others?

How would you react if a Chinese lady and her sister told you need to "bribe" if you were to visit her family & friends, in order to give them a good impression? And the lady, plus her family & friends, ask you to buy them things once they know your occupation and salary?
When a man marry a woman, the man should give more money to the wife's family beforehand to show how serious his love for her wife.
Since it is a developing country, it is all about money and face.

Ah okay. I imagine largely for tourists from other parts of China as well as adventurous locals, I imagine, but also maybe now Westerners and other Asians.
Many parts of China probably feel less exotic than say the deep south of the US for many Americans. A person from NYC is definitely going to feel like backwater country towns in places like Louisiana, Mississippi, and Alabama are very alien like. Many parts of the US feel like you are stepping into an entirely different country.

For me I'd still say rural China is more exotic, as no one there can speak English for a start. But yeah it's not as exotic as parts of Africa or India or something.
