I would probably say Hong Kong or Istanbul. Both are among the most visceral, incredible cities on earth...one has amazing history and the other has the skyline and view. Both have the hustle and bustle and are both cosmopolitan but exotic, even if HK is getting westernised. Third would be Singapore because you can experience so much of Asia quite authentically there.
George Town, Bangkok, Hoi An, Shanghai, Beijing, Tokyo, Kyoto, Lijiang, Varanasi, Agra, New Delhi, Jaipur, Mumbai, Persepolis, Petra, Jerusalem, San'a would be among the others.
For interesting and historical perspective, I would go with Beijing considering the Forbidden City, Great Wall nearby, Summer Palace, Tienemen Square, etc. Otherwise, Bangkok takes the cake imo. Bangkok offers fabulous hotels at reaonable prices, excellent food at reaonable prices, interesting and friendly culture, safe.

Then the rest in whatever order... not super interested in India or the Middle East right now.
Hopefully, I'll get the chance to see some of these cities after I move to China in a few months
