Visiting Atlanta this month and just wanted to know what are some "can't miss" Atlanta restaurants?

Major ditto on The Varsity. I would also check out Dante's Down the Hatch as well if you are looking for something truly unique.

There are Seasons 52 locations in several states, so I might skip that one.

Red Snapper on Cheshire Bridge is really a local gem, give that a try if you like seafood.

I really like both Murphy's (great brunch and good dinner too) or La Tavola in Virginia-Highland. Both have been around for a while.

Antico Pizza right off the GT campus. Make sure to sit in the kitchen. And save room for cannoli.
