Where would a good place be to pitch a tent for a couple days? I'm not talking RV park or anything like that. Somewhere I could park the car, hike a couple miles, and be secluded from anyone anywhere. Any recommendations?

I'd think Pace Bend Park would be a bit secluded this time of year. Also research:

Bastrop State Park
Dinosaur Valley State Park
Inks Lake

Most of these should be quite empty this time of year, although with the weather starting to warm up camping will be entering many people's minds.
