I think it is similar to the idea of people eating medium steaks vs medium rare. You have pretty much destroyed a steak if you cook it medium or more.

The best meat is kobe beef which has no chunks of fat but incredible marbling all the way through.

USDA higher grades are all about the marbling (fat). The higher the grade of steak the more marbling the steak has.
That's why I can't eat prime beef very often.

But yes, a steak cooked until just pink is ruined, IMO. A good steak should say "moooo" before trying to crawl off the plate.

Best steak I ever had was a Kobe filet served at the Grand Hotel in Yokohama, Japan in 1957. The four of us enjoyed the 4 (maybe 5) star dining experience (food & service) immensely, and the table bill before tip was a whopping $20.

Funny you should say that. My daughter wanted to take a study break yesterday (finals this week) and get out of the house so we went to Rudy's for lunch (her favorite as well as mine for a quick lunch). I had the prime rib and it was NOT good this time. It was as you described, overcooked. It was a near-the-end piece, but still.

Rudy's is normally very consistent. Oh well, 1 strike won't stop me from ordering it now and then. It's 16 oz for $10. And even cooked past "medium", it still cut easily with a plastic knife and tasted pretty good.

But I withdraw my enthusiasm one notch.

If your up for a little road trip I hear Blake's in Mcquenny serves up decent prime rib at a reasonable price. I haven't tried it myself b/c I usually go there for lunch with friends and it's served after 4 p.m.
