Enchnated Rock is also another pretty good one. There is a cave entrance at the top; follow the people disappearing into the 'hole'.

To echo a previous poster, if you can't find something fun to do in Austin you aren't really trying.

Denver isn't in the mountains so not much would change. Now if you took the mountains from aspen or breckinridge then there's a problem!
