I found that place in 1997. Those roads back there were still true dirt roads. My son got a kick out of the trail of dust we left as we rounded the curves. There were about 4 "Y"'s to get back to town but most of them are gone now.

The time it takes to wait in line @ Franklin's, you could drive to Lockhart and get BBQ @ ANY of the places there and drive back after you eat and you would still be in line, or you could drive to Snows in Lexington and back.

If I am waiting 3 hours in a line, I better be getting concerts tickets, a drivers license or onto a ride with my child at Disneyland. Don't get me wrong, I like talking to my family and friends, but I can invite them over to my place and cook them a meal and be having a couple of after diner drinks in 3 hours.

I had some Snow's at the BBQ Fest a couple of years ago. Of course, they will give out only the best samples; but that brisket could have converted this pork-lover to beef!!! Dang, that was good!!!

If there's more than one place to get BBQ which are very close in quality, why would you choose to wait 3 hours vs not waiting at all?

I'd understand if it were the only place around... but it isn't.

Because, having compared the four best in the state side by side, Franklin is the best. I wouldn't - and don't - go there all the time. But if someone wants to come from out of town, I'm game.

PS - the other "very close in quality" places all have waits as well. Not three hours, but a wait nonetheless.

Out of curiosity, what's better about Franklin's than La BBQ?

I've never been to La BBQ, but it's been rated right along side Franklin's in many publications as one of the best BBQ joints in Texas. The pit-master there (John Lewis) was also one of the founders of Franklin's if i'm not mistaken, so I would assume they would be comparable. What's different?

1. Different rub. LaB uses granulated garlic in the rub along with S/P

2. Consistency. When LaB is on, it's absolutely just as well cooked, when it's not, it's a close second. Same thing plagues JM as well.

Lewis was not a founder. But he worked for Aaron Franklin.
