My husband and I are excited to be moving to Round Rock, but we have no clue where to begin, in terms of finding an apartment. Could use some help to find an apartment in a safe neighborhood, near shopping and restaurants. Suggestions?

Use an apartment locator service. They are free to you. They can help you narrow down your search to include location, amenities and budget. Just Google apartment locators Round Rock and you should get some hits.

Thanks! I have been doing that, but was also hoping for some resident insight.

Most of Round Rock is safe and there are a variety of areas with shopping and food options. More importantly;
Do you need this to be accessible by walking?
What is the budget you are working with?
What size apartment do you need?

As others have said, locator services will be the best option for a broad look at what is available right now.

Round Rock and its ETJ are pretty spread out. Knowing where you need to go daily(commute?) would help in finding a place that meets those travel needs. You could actually end up in Austin, Georgetown, Hutto or Pfluegerville as those areas pretty much surround Round Rock.
