Look at R.O.C.K. (a therapeutic riding program in Georgetown). They're always looking for volunteers to do everything from work with the riders to take care of the horses.

I don't know any specifics for around here, but my niece (near San Antonio) always helped out at the stables in exchange for some riding time. It wasn't necessarily all taking care of horse - it involved a significant amount of mucking stables and treating leather - but it did also have some direct horse contact. And, on the flip side (and as her parents probably intended) it made her realize the amount of effort that would be required if she actually owned her own horse
