Driving on the mopac north from 290/71 area.
I-35 upper deck bridge ( great views of DT and UT)
71 at riverside near the airport
Southside on congress towards Downtown and capitol.
Riverside drive near I-35

Drive north on Loop 360 from Bee Caves and look for a turn-out on the right side that offers a cool view of Austin between a couple of hills.....looks like this:

Stand on the picnic table to the left of the top of Mt. Bonnell to also get a view.

Instead of watching the sunset from one place, I recommend taking a walk along the south side of Lady Bird Lake from Congress Ave to Lou Neff Point as the sun is setting. You're facing west, so you see the sunset, and you get to see the downtown buildings from different angles as the sky darkens and the building lights get brighter. Precede the walk by hanging out on the Congress Ave bridge to watch the bats, and you've got yourself a nice start to the evening.

The scenic outlook off of 360 is good, though it does get crowded at times. There are a couple of other points off of 360 south of that (e.g. Lost Creek Blvd) that also has decent views. Barton Creek Mall was mentioned, the only caveat being sometimes the security guards will shoo you away. The flyover on 183 southbound to Mopac southbound actually has a view of downtown (but I wouldn't recommend stopping ) also the ridgeline off of Mopac and Hart, there are some new condos there now, but you can still see the city until they get the gates up.
