What's your experience homeschooling (or "unschooling") in Texas? Does the state government keep out of your business?

I am considering relocating to the Austin area eventually, but curious what the laws are in Texas for homeschooling. It seems Idaho and Oklahoma are pretty lenient, but Texas appears to have more regulations.

^--This website is very helpful, but I am hoping to hear from real people and their experiences with homeschooling in Texas. Anecdotal statements are always helpful! I will not purchase a curriculum and do not want to live in a state with required testing, required subjects, etc. Alaska (where I live currently) is great but would like to live somewhere that is easier for farming/livestock.

I know quite a few people who do it, and know of quite a few programs (including by the City of Austin) for homeschoolers, but you might want to check with the Austin Area Homeschoolers for some real life experience in it. This part of their Newcomers' Guide might answer your questions specifically.

What kind of livestock did you have in mind? You'll likely want to live east of I35 for farming/livestock simply due to the soil being more amenable there for that, though there are a few pockets west if you can find them AND they're for sale when you're buying!

Texas has some of the fewest restrictions regarding homeschooling in the country. In TX, it is regarded as sending your kid to a private school. There is no required record keeping or reporting requirements. Get on the Austin Area Homeschoolers Discussion list and post your questions there. You will get a much greater response there.
