There is a housing shortage in Australia, and rent is relativity high for those three cities you listed.
No housing shortage in Australia just a housing bubble, the OP lives in Florida he will know all about the myth of housing shortages, its funny no housing shortage in Florida/California now
Be right up front about your conviction, if you were young and stupid you could get a pass, yes the two go together with males.
So get in touch with a solicitor and put some information together showing that you have had a clean sheet since you were in jail.
You did not say what your major was for your degree, let me be blunt, both NZ and AUS are interested in getting SKILLS THEY NEED, not in giving entry to those who have a degree in old European history.
Too be blunt we would grab a tradesman who had the trade and skills we needed before the vast majority of those holding a arts degree.
Rent - 1 bedroom in inner suburb "artistic" or "cool" area in Sydney - ie, Surry Hills, Potts Point, Darlinghurst, Redfern $400 - $550. In Melbourne in places such as Fitzroy, Carlton, Collingwood, Richmond, North Melbourne $350 - $500. Perth in Northbridge $350 - $450.
Crime is not really an issue in Australia. You will come across lots of junkies, streetwalkers, loitering types - if you're street smart, you'll be fine. There are muggings, but usually in more dodgy areas. Quite a lot of racial tension and violence, but if you're Caucasian, no dramas. Murders are few and fa in between. House break ins occur, but out in the suburbs usually, not in apartments in inner city suburbs. Meth isn't so big here, the ingredients are difficult to import to make it. Highest use of ecstasy and mdma per capita in the world, drug use is acceptable in clubs throughout Australia. Police don't really care all that much for small personal quantities.
Hair stylists starting at a salon would earn $35 - $40k per year before tax. Video production could be anywhere from $30k to $50k depending on the company and position. Most people with degrees start on salaries around $40 - $45k. Sydney and Melbourne have lots of jobs available. Perth, not so many.
You should be able to get a visa here to work still, we have liberal views in relation to criminal charges here (I am a criminologist). What you did in the US would probably have got you a 12 month suspended sentence here if you had no priors. Migration is a whole other issue, even without the felony, it could be a long and difficult process.
