It's all subjective to the individual, but for me personally, I would take Sydney's weather over Nice's. Sure, it rains a hell of a lot more in Sydney, but Sydney has warmer weather for a longer period than that of Nice. Plus Nice's winters are cooler than Sydney's, I know it's only by a few degrees, but that's a bit negative for me. But as I said, it's all subjective and that's just my opinion, I can respect anyone's preference for one or the other. There's no denying Nice would have a gorgeous, sunny summer.

If you're set on Australia, have you considered elsewhere in Australia, like Perth or Brisbane? With either, you get on average warmer summers and less rain (though, if comparing Sydney-Brisbane Januarys, you only marginally less rain in Brisbane but significantly less rain in Perth). And, as with Sydney, you get access to nice beaches too.
