I’m sitting in my car in a car park, my two year old Daughter is asleep in the back seat, some twit pulls in beside my car and opens the his back passenger car door against my car, then proceeds to drag things out of his car while scratching mine. I don’t like confrontation, besides, I don’t want to get stabbed.
I'd say "Hey, thanks for the personality!" <--- I have a beater.
If I was driving a nicer, newer vehicle, I'd roll down the window and say "Yo, happen to have any fresh paint?" or something like that. Not too confrontational but you're still letting them know how big of a dick they are.

I know what I would do but then again I'm not afraid of confrontation. Do you have a cell phone? Did you take his plate number? Did you report it? If you were truly afraid you should have called 911 and explained to them the situation.
If there's a mark, I would call the police and file a report.
It's interesting that you posted this because I just ran had an experience where someone hit my car several times while I was parked in the parking lot waiting for my mom to to come out of the spa (I was picking her up). This lady let her stroller hit my car THREE times while she was loading her kids and bags into the car. I confronted her politely and all she said was "I'm trying to manage shopping here with three kids". Not even a sorry. I told her that if it's too difficult to go shopping with your kids without hitting other people's cars, maybe she should get a nanny while she shops. Then checked my car -- it seemed fine. If there was any damage, I would have filed a report.
Damaging personal property/vandalism is not something anyone should accept.
