Unfortunately, people can and have been nailed with tickets for doing this, even if they don't exceed the speed limit.
Cops call it "exhibition of speed." In California, it counts as 2 points on your record and they can impound your car and charge you with a misdemeanor. Same goes for any launch which results in chirping tires.
I guess the cops here have better crap to do.

Everyone has their own interests in life. This is the reason one get up in the morning to live. You can debate whether one is responsible enough to drive a high power vehicle but that's not up to you to decide. If the government can't stop manufacturer from selling them, high power vehicle will exist. It always had.
There will be high HP cars/trucks out there if there is the market for it. Whether you like or agree with it or not. They don't need a reason or your approval (unless it's your SO).
Quite frankly, I find it ironic that the OP asked this question yet he wouldn't mind driving WRX? What the heck you need a WRX for? A Corolla would do.

You do not have to speed to get going fast, accelerate better, etc.
