We have a Jeep and I was mentioning this to my wife yesterday. When you think about it, the Jeep is a good vehicle to do this with as removing the top is no issue. It is easier to build the glass part from an open vehicle instead of cutting off the top and then finishing it off in a regular truck or SUV. It has a low range and plenty of power to get up and go, so cruising slow speed all day should be no problem and they can put it in 2wd to go faster if needed.
