I'm 6'4". The ones listed above are fine.....once you manage to get in it. The Explorer is tough for me to get in- the roof is too low at the door. Same for the Highlander. I can assume it will be worse for you. The Escalade and Tahoe for me are reasonable to get in and out of. I'd say look at a 4 door truck but my 2014 F150 is not easy to get in and out of. Once in I have lots of room. I can't hardly get in a Tundra at all. Best advice I can give you, take a Saturday and try them all out. Most new vehicles are made for gas mileage, not tall people. Kinda like the newer sports stadium seats made for children instead of adults that buy the tickets.
I'm not going to say that the headroom in the GM and Ford products on that list is bad, but for the size of vehicles they are, I'm not impressed. I sat in the latest GM products at the annual auto show, and I recently rented a Lincoln Navigator (close enough to the Expedition). All of them required me to drop the seat to the floor to get clearance (I'm 6'7"). In the GM products, I couldn't sit upright in the backseat due to the sunroof. That's pathetic.
Check out the Ford Flex. It's not as 'SUV' as some of the vehices you listed (more of a crossover), but we have one and I love it. I don't have the seat bottomed out or all the way back, and I have so much headroom that I was able to get one with a sunroof and still have no issues.
This won't fix the head room issue, but there is always the possibility of pulling the driver's seat out and re drilling to set back the seat. They are fairly easy to remove as there are just 4 bolts. This can help to get you in a vehicle that gets better gas mileage. I have redrilled 4 or 5 seats in vehicles I have had for a 2 or 3 inch set back on the seat frame. One I had some trouble with and just welded it back to the frame instead. Most seats, if you slide them all the way forward, there is no way a person could sit between the steering wheel and the seat. Makes no sense to me why they do this. Could instead just set back the seat some for taller people.
A king size mattress is 6'8", but, you can place a cushion, or blankets over the foot board. If the bed is a queen size, you can easily build a an extension to sit at the end of the bed. This is a problem in hotels. My feet stick way off the end of the bed. The other problem is low shower heads in some motels, or the mirror over the sink is too low.
