'59 Cadillac Eldorado convertible , however I would settle for a Fleetwood or Sedan de Ville. As a kid , I marveled at those and thought they were so cool. Now, I consider them a symbol of the 1950's when I was born. Wife says it wouldn't fit in the garage so would have to store it someplace and only take it out on clear days.
Whith only about 600 made, that'sd be a hard one to fine.And of course the Roadpacer was slow, it was a full size Holden sedan with a tiny little normally aspirated 13b in it. you could possibly get the more common Holden HJ sedan and swap the 13BREW into it and "create" a Roadpacer...
But even the twin turbo 13B would be slow compared to the Holden version with a V8 in it... While not as unique in Australia, the same year Holden 2 door would be unique enough for me, even here:
I read there were 800 roadpacers, I wouldn't mind building a twin turbo sixrotor, and dropping that in there.

Two choices; knock out the back wall and push a shed against the hole with no front, or knock out the side wall, and drive it in that way.
Bought a '73 back around '83 that I refurbished with a freshened interior, rust repair, paint, brakes, suspension and smaller trim pieces. Factory purple car that I kept the same color, still love the looks of that car with the fender humps and the molded in roof spoiler. Mine was a 302 but, I still wish I had kept it.
I would rather have an '81 AMC Eagle SX/4, 4.2L inline six, 5 speed, with air. Then combine the 4.2 with a later 4.0 and have a fuel injected 4.9L inline 6!
I am another who would pick the Ferrari 250 GT California Spyder, though I would want the LWB for sure. A few others that I would consider would be an Mercedes 300SL Gullwing, a BMW 507, and a Mercedes 600 Pullman, preferably a landluet.
