Depending on where you live, you may have the extra room to keep it at your place where its free. I have heard of many times where people who have done this, did it because they had aftermarket mods on there vehicles. They would have a few days to a week to decide on whether or not to buy it from the insurance company, out of the payout they receive, for what the insurance company thought they would get for it at the auction, (which would keep the insurance company from dealing with; transporting, storing, auction fees), or they would have time to remove there aftermarket stuff and reinstall the factory parts. If its a newer vehicle, and you can: store it for free, do the parts removal yourself, and know where to sell it (such as a large forum for that model); you can usually get rid of the parts pretty quickly, keep a few for yourself if you plan to buy another one, and still make money off of it.

Evidently, being a V8Vega guy, you love cars.......so you should understand that some people still want to keep that car and either repair it themselves or have someone do it for them.Some cars are special to us.

I have made deals with an insurance company in the past to keep my car because I did not want to see it scrapped. I knew I could fix it with the insurance check and not give up something I really cared for.

People have this grand idea that they'll sell every nut and bolt off of it and make money doing so. Yes, they will be able to sell some parts, but the reality of having a junk car sitting in your driveway for months/years while you try and sell certain bits off of it, it just silly. Now, if you have the real estate to store it and don't mind it becoming a lawn ornament, then more power to you.
