Was it prepared properly? If someone skinned the muskrat that doesn't know what they're doing they might have cut open their musk glands that would have ruined the meat. I'm definitely expecting a very gamey tasting meat since it won't be factory farmed raised.

Muskrat (often labelled "Marsh Rabbit") is available in city markets in the early springtime. I have seen them fully dressed and bagged, as well as head and claws left on at Cross St, NE, and Lexington Markets. The flesh is a shocking bright red color when skinned. However you prepare them they will be intensely gamy (which some folks like), even with their scent glands removed. I've had success making them more palatable by first soaking them in milk or acidulated water, then lightly brining the meat. I think they are best when braised or stewed with plenty of root vegetables and some bacon, as the flesh is rather lean and kinda stringy. They are very earthy, almost muddy tasting.

There used to be a restaurant in Leipsic, DE that made a really excellent fried muskrat. I had it a number of times through the 1980s. Would eat it again if I could find a good source. Like many game animal-based dishes, it takes careful preparation. Niel
