I heard this is super traditional fare for hardcore Chesapeake and lower DE folk. Any restaurants in Baltimore or surrounding areas cook up some good muskrat?

I feel like Faidley's in Lexington Market might not be a bad bet - they have many different local fares, and I think muskrat might be one. Give them a call or hopefully someone here can confirm.

I have never seen Faidley's offer Muskrat. But they are pretty decent on crab cakes, which apparently is their main showcase fare.

Faidley's sells muskrat in season (which I believe is March). I bought two last year. Grilled one and braised another. Might have been the worst thing I've ever eaten.

and I sort of just assumed it was to soften the meat up a bit... what i'm thinking now is you do that do draw out the bad taste from the meat.

Anybody interested in preparing muskrat should try contacting St. Phillip's Episcopal Church in Quantico, Md.

I'm not sure if they're still doing it, but they used to have a turkey and muskrat dinner in January. My parents went to it and brought home some of the muskrat and I liked it very much. I'm sure that somebody who attends that church would be able to help you out.

You need only go maybe to Easton or Cambridge to find it served. I'd rather it prepared by locals than attempt to try it myself.
