Sadly, there is no simple answer for you. They all have the possibility of being loud (especially during sun up and sun down). I have raised all 5 over the past several years as well as many others.
Of the hookbills, I have found that African Grays are the most quiet in the sense that they are not screechers like most big macaws.
Grays will chatter and make noise a lot, but not usually overly loud.

Unfortunately, Grays are unattractive in my opinion especially when compared to Amazon.
of the ones ive worked with the lilac crown was the quietest...but she was also the most tempermental and moody...
amazons are beautiful...but not eactly beginner friendly...of all the parrots kept in captivity ive found amazons to be the most likely to "act out" lol

And African Greys, while similar in size and shape, are not from the same continent. Not even a fair comparison.
