Sure, we have those: Green Chutes, Indie Made, Bricolage, Mixed Greens, Bee Wise, Rosie Made... not only are they made in the US, they're mostly made right here in Idaho.

Weird timing, as I reread this old thread from the beginning before reading the post that bumped it and assumed it was going to be about the Korean BBQ restaurant that is opening up. It's called K-Fusion and is on Broadway right next to the Broadway Bar. The Weekly said it should be open by now, but an email I got from the owner last week said it should be literally open on today the 13th. Now their website says the grand opening is on the 29th. Perhaps they had a soft opening today.

Chef Roland's existed until he passed away. There was a Cajun food truck about three years back but it didn't last too long (the food was alright but it was pretty expensive for a food truck). It could thrive there but you need people with the background to move to the area.

I'm really disappointed a ramen restaurant hasn't opened there yet. Tons of pho places but no ramen. The ramen scene has exploded in the time I was away from L.A., and I'm as giddy as a schoolgirl about it. You'd think someone would take advantage of a gaping hole in the food scene there. Shige was pondering the thought of serving it but he never put it to fruition. It just goes to show you the lack of Japanese involvement in Boise when it comes to businesses, or at least food-based ones. The ones who are there aren't running any restaurants.

I might as well piggyback this info here: based on the reviews I've been seeing, you might have some more legit Chinese fare there. Red Pavilion on Meridian south of Overland. They have the typical Americanized menu in order to survive but also have a more authentic menu available if you want something more traditional.

I see that they put the ramen on the happy hour menu and gave up on the izakaya menu. It's hard to be 100% sure based on their wording, but it seems like they source the noodles from Sun Noodle, which is the next best thing to making their own. Hopefully their broths are made from scratch. I got the ramen at Yoi Tomo and it was just glorified Korean instant noodle soup, and a friend stated the same thing when he went to Wasabi. I'd still like to see a restaurant open up that focuses primarily on ramen and has the typical ramen restaurant setup with the elongated counter with seats and the chef and his workers cooking/prepping right in front of you.

One business I don't think we need any more of is would be another mattress store. We have so many mattress stores already I wonder if they are really used to store money in them for money laundering instead of sleeping on them.

The coolest business I noticed lately was Redline Recreational Toys. It is a membership organization for outdoor enthusiasts instead of just another rental place. Restaurants are tough competition especially with many people just Groupon shopping the next deal instead of trying one and going back again and again.

I am amazed at how busy the Dutch Brothers Coffee shops are for very small drive through establishments. They have drive up windows on both sides and it is common to see cars 3-4 deep at all times of the day.

I think with all the people coming to Boise to check it out and moving here, that anything associated with small group tours will do well if you learn about a niche and market to it. We are starting to see more wine and beer tours, food tours, etc.

We have a lot of small business entrepreneurs and many of them are great in their individual trades, but are horrible at marketing, returning phone calls, scheduling and follow up. A small business management service would do very well here if done correctly.

Speak of the devil. A hybrid ramen/gaming place opening up thanks to Boise Fry Company(?!): New Boise restaurant to serve ramen and ping pong. (Yes!) | Idaho Statesman

I'd have questions about the background of the person/people making the broth, and the "fusion" mention usually rubs me the wrong way. But then again, the large majority of patrons won't be demanding purists like me.
