Confucius on Fairview is open till Midnight every night. Twin Dragon on Fairview (downtown area) is open till midnight most nights, and till 2 am on Fri and Sat.
I haven't been to either place in a couple of years, so I'm not vouching for their food.
I see Buffalo Wild Wings in Meridian is open till Midnight on Sunday, and till 1 am the rest of the week. I've never eaten there but have heard good things. Might be worth the trip to Meridian - traffic should be light at that hour.
