I would strongly suggest "The Art of Racing in the Rain." Told from the point of view of a dog, whom you will come to love very much before the book is over.
To me, both Seabiscuit and Watership Down are modern classics.
They are way, way up there.
I also enjoyed Charlotte's Web, The Cricket in Times Square, Winnie the Pooh, and The Black Stallion series.
I will add to this: The Story of Edgar Sawtelle
Sunny, I enjoyed all of your choices, but especially Bunnicula and Where the Wild Things Are.

Oh the Black Stallion series were some of my favourites too
George Orwell - Shooting an Elephant. A short story rather than a book. Timeless in its scope, especially in today's world. Worth every bit of the minutes it takes to read!
A Dog's Life (The autobiography of a stray) by Ann M. Martin
It is a actually a childrens chapter book, but once I starting reading it with my kids- I was impressed.
