We recently moved to the area and am looking for somewhere to have a date night with my husband. With two small kids we don't get out much so I would like someplace that is a little more fancy. I am a vegetarian so having options would be nice. Thanks for any input!

I would suggest:
Brasserie Ten Ten on Walnut St
Q's - Boulderado Hotel
Colterra - strictly speaking in Niwot, not Boulder
Greenbriar Inn

How about Flagstaff House?

I've never been, but it looks fancy and cool.

Also eye-wateringly expensive . But if you get a table by the window, possibly the best view in town.

Flagstaff House can be very romantic, but it is also very expensive. Definitely one of the most expensive restaurants in Boulder. Same with John's... small and romantic but expensive.
Vegetarian in Boulder is not an issue. Almost every restaurant has something vegetarian on the menu.
Our friends rave about Mateo on Pearl St./18th. I haven't dined there, but they love it. I've been wanting to try Black Cat Bistro downtown. It looks cozy and romantic (peeked in the window) and I like their menu online.

Frasca (pricey) or Beehive (still pricey but not as much)

I second Q's, Colterra and Frasca. Leaf (totally vegetarian) is also yummy. I haven't been in a while, but L'Atelier is also an option. I also like Oak at 14th but they don't normally have too many veg*n choices. Brasserie 10 10 is good, but it may be a little noisier than you'd like for a romantic dinner. If you want to avoid downtown Boulder, Da Gabi Cucina is also good.

bon appetit et santé

Thank you! These are all looking fantastic and we may just have try more than one. Colterra and Mateo may just be at the top of my list.
