Would the restaurant owners have to pay the worker a fixed amount to compensate them for the lack of business/tips? I'm not sure about other states, but restaurants only pay about $2.30/hr to waitstaff. The rest of the wait staffer's comp is tips. I'm not even sure if all waitstaff are honest and report all of their tips as income. Could it be possible that the restaurant owner's fixed costs are more than what he pays the waiters/bartenders? It seems too slanted toward payroll and not enough toward the fixed costs.
