I'm English. If I wanted a working holiday there, or even to work longer there, hypothetical this one, or I want to see some romantic places, beaches, hills etc, where they're not over-populated, where should I go?

California is a very large state with some of the most most diverse landscape in the US. There is 840 miles of coastline. Which part of CA are you thinking of or will be working in? For less crowded areas Central and Northern CA are much nicer than SoCal (LA, SD, OC). Some good options to look into are Monterey, Carmel & Big Sur (Central Cal), Sonoma Coast and wine country in Napa Valley (NorCal).

If you have a car and a lot of time and gas money on your hands, driving on Highway 1 south from San Francisco is really great scenic drive on a nice sunny day. It's a bit boring between Santa Cruz and Monterey but otherwise is really scenic and relaxing (unless there's a ton of traffic like in the middle of summer).

Outdoors - Yosemite, the red woods, southern beaches, the northern coast, the mountains and deserts, Gold Country foothills, etc. Life's too short to just see cities and hotel rooms.
