The picture makes me homesick for the Central Coast. The corn on my farm ( I have the ground leased out) is " up to my eye" and then some. We are getting all the rain here in central NC that the Midwest is not getting. We are having a good corn crop this year.

I have a son that is a 5 star chef, and one of the dishes they got raves over was to split it lengthwise and cook on a charcoal or gas grill cut side down. By time it starts to blacken it is done, with a little butter on top and salt and pepper, it is delicious. You can also sprinkle some Parmesan cheese on it for added flavor.

Most flavorful way to cook it, and is a nice addition to a plate presentation to your guests.

Basically, have it leased to cover the taxes. The farmer is happy! We'll have to see about next year's lease though.

Yum good stuff, that Nopal... I like it with lots of hot peppers... (I will skip the pork, unless it is real, meaning not industrial, fed corn and soy living on concrete, injected with antibiotics... Can not eat the stuff any more, smells like pi*s and tastes like sh*t from the store..)

Don't eat zuc's either, when their are superior summer squash in the world such as patty pans or better yet Tromboncino squash...
