Cows have come a long way in the last few years - they've been organizing. I wouldn't worry about hitting them, I'd be more worried about running into a gang of them . . .

Remember, if you hit a cow, you have to pay the rancher for its value. No matter how mangy a stumbling forlorn cow it was before you hit it, once you hit it, it becomes the ranchers most prized brood cow with an almost priceless value. Which you will have to cough up.

I saw a BMW once that hit a cow at night... much worse than hitting a deer.

In open range country it does not pay to drive with much speed at night.

Your insurance company will deal with the farmer, never fear. Just drive a reasonable speed for conditions, and you should be ok.

Hitting a cow is an extremely rare event, so ordinary caution should suffice.

Plus, they'd be able to handle any communications with wandering cows, if the need arose.
