Something in the 20k BTU range.

I found this: https://www.amazon.com/GS-3900P-Port...G?ref=ast_p_ep but I was hoping for something even more simple.

I have the jet-engine 100k BTU Bayou/Cajun/King cooker now. I'm thinking of modding it so the burner is better protected from the wind, but I wanted to see if anyone had any suggestions. Most of everything in the single burner category is made for rapid boiling and not flame control. A two-burner would be fine if it had good wind protection. The idea is when I'm done with it, I spray it down with Simple Green and hose it off.

I'm trying to make an outdoor kitchen so I can fry something without smoking up the house.

That's rather large. A Big home range burner is 5000 Btu

Look for a "plumbers pot". +/- 40,000 Btu
A Candy Stove will be about the same

That plumber's pot seems a tad intense.

The Amazon stove I linked runs 15k, so I figured the cast iron versions would run a little hotter. Unless something comes along, or I decide to mod my Bayou Classic, I might get it and plumb it to run off a 20lb tank.
