Not a lot of ethnic restaurants, I'm afraid. There's a reason the area between BC and Ontario is called The Gap. Chinese food tastes watered down and insipid most of the time; Mexican or even Tex-Mex food is hard to come by and doesn't taste authentic half the time. The same goes for French and real Italian, not to mention Greek. Forget about finding more obscure cuisines, such as Peruvian. There are a few hidden gems in Calgary, Edmonton, Winnipeg, Regina and Saskatoon (I would say Edmonton has the best ones of the lot) but they are hard to find all the same. On the other hand, if you wanted to get a plate of huevos rancheros in Toronto, you'd have 20 excellent restaurants to choose from.

There are plenty of ethnic restaurants here in Winnipeg. Lots of cool little ethnic stores too.

Plenty here in Calgary too... not sure when the last time you were in Calgary Arctic_gardner, but I think there are MORE ethnic restaurants than typical North American restaurants....we even have a couple of Ethiopian restaurants!

I'm in Manitoba but I would also say there seem to be MORE ethnic restaurants than not. Ethnic is very in everywhere.

This is VERY true, I miss a lot of the many diverse mom and pop places, many are also nestled far from each other as well.

Winnipeggers really like to boast about how many places they have to go out to eat. There was a survey many years ago that ranked the city high in terms of restaurants per person, coming out very high.

It does have some things lacking, and often is behind on trends food wise, but going out to eat is like a hobby and a past time in that town.
