Press down on the icon for the app until it starts to jiggle and then tap on the X. That deletes from the device. You can also delete it in iTunes so it does not continue to sync.

To close an open app quick double tap the home button to show open apps at the bottom of the screen, then press those icons to get a minus (-) sign to allow you to select one or all apps one at a time to close. Tap the home button to return to main screen.
BE SURE that you close apps not in use to save much battery life!!
If you click on safari, click bookmarks, the manual to the ipad is already loaded for you. It will help you understand how to use it better. A lot of people dont know this.
