Is it possible, through your cell phone provider, to retrieve old contacts and text messages that were once on a SIM card? I had always thought that they might have a index of sorts, showing whom you've added as a contact and whom you've texted. Does that exist?
At&t does have a mobile backup option for your phone contacts. Did you previously set it up on your phone? If not, they will not have access to that information.
Text messages are physically stored on the phone and not the SIM card. They would not be able to transfer text from one phone to another or provide you with the content of such text without a court order.
No in short. Your provider can only look at the numbers you have been calling/texting. they can not see who is in your phone book and see your contacts.

That is the answer that I was looking for. Thanks!

Can you view those just by logging on to your account? Would it be that simple?
