I just purchased a S5 from ebay and I upgraded to lollipop. The phone is now laggy and overheats easily. Should I go back to kitkat 4.4.2?

a) You cannot go back
b) Check for more updates. The S5 was given 6.0 Marshmallow by most american carriers and there was a 5.0 update that addressed a memory issue that could cause overheating.

Do you need 2?

The S5 with Marshmallow (and the patched Lollipop) are both pretty stable.

Sure you can, with the right tools, whether it's a good idea or not is a different story.
