I ordered a Galaxy s10 Plus and am trying to find the best most protective case that I can get for it.

Any suggestions?

You will probably have to wait for the manufacturers to startup their production of the new cases. Not surprising, but it could take a few weeks or months for cases to be readily available for a new phone. Nothing new.

Yes, the phone is not even officially out yet. You will have to wait.

I would bet that Otterbox will make a case for it right away

There are a couple of cases out there already. I ordered one from Amazon that was around $15 I think. I may upgrade to a different case later. It should be delivered around the time I get my phone (March 10). I didn't want to have a $1,000 phone without a protective case even for a short while.

Definitely get some type of case to minimize possible damage to the phone. My issue with some of the larger, more protective cases is that they almost double the size of the phone's thickness.

Otterbox Defender and Lifeproof Fre are the usual culprits for beefy cases. There's some others if you want a loud design. It's a case, not much to it. Big beefy cases like the Otterbox/Lifeproof protect better. I never uses cases. The last two phones I've killed I was drunk and forgot I was holding my phone in a hot tub on one (college, fun times). The other I went pavement sliding on my phone low siding and the impact broke the capacitive part of the touch screen. Two phones in 15 years is okay with me, case wouldn't have done anything for the drunk in a hot tub incident anyway.

I ordered a Supcase Unicorn for my LG G7 ThinQ five months ago, and so far has held up well .Amazon too has a Supcase Unicorn out there now for the Samsung Galaxy S10 Plus 2019 release for $19.99. The advantages of this case is it I say a rubberized hard plastic mix, quite protective, clear plastic screen cover with no adhesives or glue, custom fitted for ports, camera, and such for your phone, user reviews are around 4.5 out of 5, and also comes with a holster (optional to use, which I do). Not so great depending - little difficult to install around perimeter of phone (instructions included) and if need to remove to get to SIM card or another reason (found instructions on YouTube), and does make the phone a bit thicker, but IMO not bad. Had the Otterbox previously with kickstand holster for my previous Samsung Verizon Wireless phone, and and not as rugged with holster clips breaking and using moisture adhesive to install with air bubbles over time.

OtterBox are probably your best choices.

Cases always come out before the flagship phones do. Phone companies release specs to case companies beforehand. This is where a lot of leaks come from.

I have an Armadillotek. Very happy with it so far. I had a UAG case for my Note8 for a year and a half with zero issue, but they are a bit spendy. ArmadilloTek meets the same military standard for 1/4 the price.
