If you look at apple's web page you can compare the features and performance of your 6S to the newest SE.
The SE offers up to 256Gb of storage vs the 128G max of the 6S. It also has a faster, newer cpu so it will likely last through many more ios version updates into the future.
I also have a 6s but for now I'm not upgrading. I don't see a big need.

The 6S has served me very well over the years, but I need a phone with more space on it. I have to rotate my apps at this point.
5g support at this point is little more than a selling gimmick. By the time 5g is generally avalable, the typical smartphone owner will be two newer models down the road. Apple knows that
Very good points, specially since the OP plans to RV travel. There will be a long wait before 5G technology is fully implemented in the US.
That said, earlier this year I upgraded from a 6s to an iPhone 11, and am very happy with it. The screen is a little larger than the 6s, but I don't need a larger screen since I mostly use this phone for text and voice. The camera is quite good too, and so its photo editor. The 11-Pro has an additional camera lens (3 total), so it has additional features, but the regular 11 is plenty for me. I upgrade my wife's iPhone from a 7 to the same 11 I have, and she too is very happy with it. The battery holds a charge a lot longer than the 6s and the 7, with is a plus to me.

The storage has only become an issue in the last year, and I got the phone several years ago when the 6S first came out.
I've had to add some apps to my phone for work, and I really like to listen to podcasts. I'm constantly deleting from the "Downloaded" list, which isn't a big deal. And when I travel for work, I needs stuff like Yelp, Lyft and Uber on it. It's been a juggling act.
With my fitness and diet kick, I really need the applewatch for its activity tracker and I would like more storage on the phone.

Then 64GB might be enough for the SE. For the difference in price you can subscribe to iCloud and backup your pictures (and your phone) there.
