When iPhone shows 80% charged is it really 80% charged because... (charging, battery, ATT)

I notice it takes a lot longer for the charger to get iPhone from 80% to 100% charged than it does to get it from 50% charged to 80%.
I’m convinced Apple has pulled an ingenious trick and here’s how I think it works
*When iPhone shows 80% charged it’s really like 63% charged
*When it shows 90% charged it’s like really 78% charged
*At 95% charged it’s really like 88% charged
So here’s why I think Apple does this on purpose making them look better
1) When charging your phone in a rush, phone will show your power charger is adding battery charge faster than it really is, making the user be proud how fast their phone is charging (because it’s really not charging as fast as the meter is showing)
2) Overnight when you charge iPhone and wake up to 100% charge in which case it truly is at full charge, you will be awwwed by seeing your phone holds charges of 92%-100% for a long time making it look like your battery life holds better than it actually does.
(Note: As I typed this entire thing ... my phone has shown a 98% charge and now it STILL is showing a 98% charge! I am not plugged in, my phone is 26 months old).
All this trick is to hide the fact that the 90% vs 100% battery display on the iPhone may in actuality be a lot more of a difference than 10%. I really believe Apple does this to deceive customer into believing
1) their phone charges up faster than it really does
2) that at full battery where one would test battery life, think it holds a charge longer than it really does
Apple says the sweet spot is 40% to 80% charged. I used to let mine go down to around 3% but now charge anytime below say 30%. and rarely clear to 100%.
The OP sounds like a conspiracy waiting to happen. All talk and no substance. All 3 theories don't make any sense and no sensible reason offered why Apple would to do what is alleged. Apple didn't invent the battery and they don't manufacture it, they buy it from their suppliers.

What the OP is saying makes complete sense; just that his theories on why/how are wrong. It takes a bit of understanding how the phones work to know what's going on here.

Phones will charge a battery at a higher wattage so you can get for 0-80 fast. However once the battery starts getting closer to full, it needs to slow down in order to reduce the amount of heat generated by charging and, thus, reducing the damage the heat will do the battery.
OP: Instead of measuring charging times, measure deletion times. You'll notice that the rate is constant if you maintain constant similar activity.

That is a technology issue with the battery, not some conspiracy by Apple or any manufacturer. As mentioned, Apple didn't invent or manufacture the battery. It is just the nature of how the battery is designed. Battery technology hasn't changed as quickly as the overall cell phone technology.
Like others have said - it's a battery tech characteristic. You experience the same with EVs. It charges faster early on, then slow down as you get closer to full.

Apple absolutely does not say that. The 'battery experts' recommend that for maximum battery lifetime. Apple doesn't want you to make your battery last longer.

You are ascribing to conspiracy that which is merely chemistry/physics. Everything is not necessarily a conspiracy out to get you.
Why does the last 20% of a battery take longer to charge than the rest?

The latest battery technology used by Apple and likely others, no longer has a "memory" or has to be substantially discharged on a regular basis. It is now all about cycles and little else. Extreme temperatures hurt battery life, as do full discharges, and keeping batteries 100% full by keeping your phone plugged in all the time.
