I would like to buy a new phone, but I don't want Google to have anything to do with it, and for several reasons. Are there any phones left without this spyware crap ?

If you try AT&T and Verizon, forget about it, they are probably not whitelisted by them even if they are unlocked. T-Mobile might work if they can provision VoLTE, although you have to be sure you have support for the right LTE bands.

I PM'ed a guy on XDA who claims to have the method. He will not post it publicly.
These folk offer a new de-Googled phone called Fairphone. But they also offer way to install their system on some Samsung Galaxy models without breaking a sweat. Thats the cheap way to go.
An Android device won’t report your details back to Google unless you let it happen, by adding your Google account details and using Google apps.
Use alternatives to Google apps, like HERE WeGo and Citymapper for Maps, Firefox and Opera for browsing, Blue Mail for email, and Signal for (secure) third-party messaging.
Always using a VPN should go without saying. Quit searching with Google and use DuckDuckGo. Every bit you do helps with security/privacy.
