16gb 3g i have and i use rougly 8 of that at my peak use... but people used to say that 4gb on the original iphone was enough, so go with 32gb but wait for the new iphone
i have ~100gb of music, and the 8gb iphone works fine for me. my roomate paid the extra $100, and got a compass, an extra 8gb, a faster processor and some other doodads. i personally thought it was loony to pay double for that, but to each his own.
itunes lets you set up dynamic playlists that are very helpful for automatically sorting through what songs get loaded to your iphone and what does not.
my current system is that if i rate it 3-stars or higher, or if i've added it within the past 2 weeks, it is automatically transferred to my iphone.
I got the 32gb and I have filled it about 3/4. Its around 8gb of pictures and the rest is songs and apps. I would say it would depend what kind of stuff you would want on it.

If you want to load alot of media on it get the biggest you can afford. For my purposes 32GB is still too small. I'll consider an iphone when it has 128GB+. Right now my 5 year old ipod video is doing a fine job!
