There is so much to do its hard to list it all. It will be quite warm, even as early as June, and there will be plenty of bugs.
A few weekends ago we went on a kayak tour from Shem Creek that was an absolute blast! I had been expecting it to be a basic guided tour where the guide was there to show us where to paddle and keep us out of trouble, but it was a nifty local history lesson right there on the water, too. I HIGHLY recommend these tours for one of your mornings in town. They offer two, three, or six hour tours. I'm an old lady, so two was plenty or me. I was anxious because I have never been in a kayak and I have a knee injury, but it was much easier than I had expected.
Look for them at Nature Adventure Outfitters
One other thing I would do is sign up for groupon or or living social emails for the area now in anticipation of your trip. You can buy tickets to activities pretty far in advance in a lot of cases, and save yourself a bunch of money.

Thank you for all the helpful replies. I am debating between Charleston and Williamsburg, Va. I am going to try to make a decision by this weekend.
I think Williamsburg is worth a day trip ... I can't imagine spending a whole week there. There's a lot more to do in and around Charleston. If I were you, I'd consider working in a day trip to Brookgreen Gardens (80mi), and another day trip to Savannah GA (108mi). Just my personal opinion based on my own vacations when I lived in NC.

When we were down, we stayed at a cabin at Givhans State Park, right on the Edisto River. It was really nice. We didn't rent kayaks, but I believe you can nearby. Givhans is just a little north and west of Summerville.
Last time I went kayaking was in W. Virginia. For some stupid reason, they put the lunches we packed on my kayak which I overturned about 34 seconds into the trip.

I just now noticed your timeframe... are you SURE you want to go hiking in 100+ degree (heat index) heat? It so, you'll be golden. You may want to try and find trails closer to the coast if there are any, so you'll have the chance of picking up an offshore breeze. Maybe something along a river would work as well since every place I go to along the first stretch of the Ashley River at least is fairly breezy most times of the day.
Anything *on* the water, and you'll need sunscreen by the gallon. The sun is NOT your friend around here!
