Bridges, in Shelby is one of the best in the state. They are one of the places featured in the Sept. Our State Magazine. One problem - no ribs. Red Bridges Barbecue Lodge Inc. If your guests really want ribs, I'd vouch for this place. The guy who does the BBQ used to have his own restaurant. Cherokee Street Tavern Menu
Smoking with wood is one thing. Any of them can toss wood into a propane fire. It's the cooking with wood that's rarely done. Basically to do it, you have to burn down a lot of hickory wood until there are just glowing coals. It's these coals that are then shoveled into a pit and the hog is cooked over it. It normally takes 12 hours or more.
Very few restaurants do it these days because of the cost, labor, and skill involved, but it produces BBQ hog that's unlike anything that can be accomplished over an electric or propane flame. (they cook too fast) To my knowledge there are a few places in Shelby and a few in Lexington (NC) that do it that are on the beaten trail, and a handful that you have to search out that only the locals know about.
And that is my issue with most BBQ places these days. NC born and bred I have an affinity for wood fired Q. And it must be accompanied by a spicy vinegar based sauce or nothing at all. I prefer to cook my own , but as stated, it's an all day affair and is only worth the effort when making quantities for parties and gatherings. Too often we try new places for an occasional fix only to be disappointed. I am going to try this place on 521 this week and I truly hope it does not le me down. Thanks JR for the referral.
