Penguin obviously, LuWans and Mert's Uptown for soul food, Price's Chicken, Big Dog's Cafe in Waxhah for breakfast and I don't know if I'd exactly call it a dive but Kristopher's in Matthews is good as well.

Another true Dive is the Press Box, I believe it's on Montcroft, down the street from the Roasting Company. They are a little hole in the wall type place that has great food. I'm not sure which day it is, but they have half price burgers once a week and they are really good, my favorite only to the wings there, which are best "double-dipped" with extra sauce on the side...
San Remo - Italian and other menus items via Greek cooks
LuWan's - Soul Food - on the corner of Arrowood and S.Tryon
John's - Central Ave - Around the corner from the Penguin. A meat and 3 type place with an awesome breakfast - try the brains and eggs with a side of livermush.

BTW The Press Box has closed.

Yes they are Greek owned but I would describe their food more as "home cooking". They do have some italian dishes but their specials are things like hamburger steak or beef tips on rice. I tend to like Sunrise better than San Remo's b/c their fried chicken is so good. For breakfast you can't go wrong with San Remo's though!

For fans of the Roasting Company, you need to check out Genaro's Rotisserie in Indian Trail (in the shopping center with the Walmart on 74). It's a Peruvian restaurant that serves chicken cooked in a coal rotisserie...it's KILLER

They also apparently opened another location off Park Rd near Park Cedar in South Charlotte, but I haven't been to that one yet

update...for any one who may stumble upon this thread...

The Press Box which I mentioned a while back is now gone. It's been redone and it stays packed all the time, can't remember the new name, but it's no longer a dive.

Long Live the Dives!
