My parents are considering moving to and retiring to the Charlotte area and I was hoping for any recommendations based on the below criteria.
Home price range: $300K-$400K
Acre size: 1-2 acres (though could settle for slightly over 0.5).
~30 minutes or less drive to downtown Charlotte (with no traffic)
It seems like the best areas for them would be commuter towns where you aren't paying up for schools or ease of commute.

Mint Hill, Matthews, Huntersville.

To be honest, I think Mint Hill, Matthews, and Huntersville are all good ideas for them, as they're all very desirable suburbs...but having worked with current clients looking with a $400k budget around Matthews and Mint Hill, getting them an acre with a move in ready home won't be a really easy hunt. But it's possible.
I'd also recommend Belmont, Mount Holly, Harrisburg, and Locust in there. Locust may stretch the commute to Charlotte time but it's a great little place to settle down on a larger piece of land.
Everything in our area of Matthews that has hit the market between 450 and 800 has been snapped up like candy laying in the street after the Christmas parade rolled by. I would guess there is no difference in the 300 to 400 range.

Absolutely true. The market in south Charlotte/Matthews is insane right now. Has been for a while. The good ones are going in one or two days for significantly above asking price. I’m talking $15-20k above ask.
Do your parents really want to be responsible for 1-2 acres of yardwork?
That was my first question also. They older they get, the harder and harder it will be to do the yard work. Even a half acre is too much for us, and we are in our 70's.
My second question is why do they want to be within 30 minutes of downtown when they are retired?
We were looking in Belmont and kept looking further south within Belmont, until we "discovered" crossing a bridge into South Carolina into the Lake Wylie area: beautiful homes, well priced, EXTREMELY lower property taxes, great school district, and 30 minutes to uptown when there's no traffic, but that's implied hah.

A search on Zillow for 300 to 400K 1 acre or larger in a circle that would be close to the outside limit of 30 minutes from center city (using 485 as the outer limit) turned up 4 or 5 houses at best.
As a reference, an unofficial count showed two unicorn and 12 hens teeth in the same area.
