I know it's chain, but it's far from a common one. Mimi's Cafe is one of the best places I've had breakfast at in town...and it's in north Charlotte. I don't really get a chance to try any small non-chain places. I'd recommend my kitchen but there are two problems:

1. It's not bad, but it's not exactly recommendable. It puts something in mah bellah in the morning...and that's all I ask.
2. I'm doudtful that anyone wants to share the table with me in my pj's as I try to shake the morning grog's out of my head at 5:30am!

(disclaimer: I'm referring to when the kitchen is being operated by me. When the wife is at the helm, it's highly recommendable...but I'm not willing to share with strangers. Sawry.)

Hendricks in Salisbury does a great breakfast.
Former name was Blackwelders, and my grandfather was a cook there for 20 years or so after the war.
If we want a big breakfast (10x a year or so on a Saturday) we drive there - about a 1 hr drive from South Charlotte.
Hashbrowns, grits, bacon, eggs.

Same here - although I do cook up the waffles made with Baily's Irish Cream in them (thanks to whoever posted on here last summer about the French Toast with Bailey's).

And since I'm south of uptown, this doesn't help the OP, but Eat Here Now in Ayrsley has a good diner-style breakfast.
