Today I test-drove a 1999 Tahoe with a split front bench seat. It went about 60/40 with the driver's side being larger, and both seat belt anchors for the middle seat and passenger seat were on the passenger's side. The seat was original.

Did they ever make the Suburban / Yukon XL with that same split front bench seat, in any year from 1995 onward?

Yes but they are usually in "stripper" trim levels.......vinyl seats/rubber floor/SL trim/steel wheels. The government orders them like that.

I agree, the only way you'd find that configuration on anything but a bare bones model is if someone did a line-by-line special order on the vehicle, like someone with a huge family that needed the center front seat.

It shouldn't be a difficult swap provided you can find a bench seat that matches your interior. Or you don't care whether it matches, or are okay using a seatcover to make it match better.

As to the cost, I haven't a clue.

Do those seats have the same bolt pattern? Will the bench bolt in without modifications?

I'm handy enough but I wouldn't want to attack a seat swap if it required welding, a blowtorch, etc. And I'd hate to start the swap by removing everything, just to find out I can't execute it.

The 60/40 split front bench could be had in '95-'99 Suburbans for sure, but they are extremely uncommon. I don't recall ever coming across a front bench in any '00+ fullsize GM SUVs.

That 60/40 bench is the same bench used in the '95-'98 pickups. Assuming you're starting with a Suburban of the same bodystyle equipped with buckets, the outer seat mounts will be in the same location. I forget if there are inner mounts for the "40" section, but if there are they should line up with the inner mounts of the bucket on that side.

You should be able to use a bench seat with a direct bolt up from any chevrolet pickup 88 to 99 or a bench from a 92 to 00 suburban. Might start with salvage yards or ebay.

That would be '88-'98 pickups (plus '99 Classic) with the exception of '88-'91 crew cabs and '92-'99 Suburbans. The '99 pickups and '00 Suburbans were of the next GMT-800 generation. I would say to stick with the '95+ bench on these trucks, though, since the interior was updated in '95 and the late seats are much nicer than the early.
